12yr Aged Cheddar small Block

Aged Cheddars are snacking cheese.  They are best when served at room temperature.  They are crumbly and at the same time they are creamy (when served at room temp).  Often times you'll get little "crunchies" which are in fact tyrosine and calcium lactate crystals.
